Egyptian National Street Food : Koshari
Koshari is Egypt’s beloved national street food, a hearty and flavorful mix of rice, lentils, pasta, and chickpeas, topped with a tangy tomato sauce, crispy fried onions, and a splash of spicy vinegar. This comforting dish is a perfect blend of textures and bold flavors, offering a satisfying and affordable meal that’s enjoyed by people from all walks of life across Egypt. Ingredients:
1 cup rice
1 cup brown lentils
1 cup macaroni (small or big )
1 cup boiled chic pees
2 large, thinly sliced onions
2 cloves minced garlic,
2 cups tomato sauce
1 tsp ground cumin
1 tsp. ground coriander
1/2 tsp chili powder (optional)
1/4 cup vinegar
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Step 1: Prepare the Lentils
1. Rinsethe lentils thoroughly.
2. In a pot, add the lentils and cover with water. Bring to a boil.
3. Reduce the heat and let it simmer for about 20–25 minutes until the lentils are tender. After draining, set aside.
Step 2: Cook the Rice
1. Rinse the rice until the water runs clear.
2. In a pot, add the rice and 2 cups of water. Bring to a boil.
3. Over low heat, cover, and let it simmer for about 15 minutes or until the rice is cooked. Fluff with a fork and set aside.
Step 3: Cook the Macaroni
1. Boil water in a large pot; add a pinch of salt.
2. Add the macaroni and cook according to the package instructions. After drain, set aside.
Step 4: Make the Tomato Sauce
1. Heat 1 tablespoon of olive oil in a pan over medium heat.
2. Add the minced garlic and sauté until fragrant.
3. Add the tomato sauce, ground cumin, ground coriander, chili powder (if using), salt, and pepper.
4. Let the sauce simmer for about 15 minutes. Add vinegar and stir well.
Step 5: Fry the Onions
1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
2. Add the thinly sliced onions and cook until they are golden brown and crispy. Remove from the skillet and drain on paper towels.
Step 6: Assemble the Koshari
1. In a big plater, layer the rice, lentils, macaroni, and chic peas.
2. Pour the tomato sauce over the top.
3. Garnish with the crispy fried onions and fresh parsley (optional).
