Recipe for Fuchka (Pani Puri)
Bangla Bites or Pani Puri offers a delicious journey into Bangladeshi cuisine with a variety of flavorful snacks and street food. From spicy samosas and crispy pakoras to savory pithas and tangy jhalmuri, each bite captures the vibrant spices and rich culinary traditions of Bangladesh, providing a perfect taste of authentic Bengali flavors.
Ingredients:
1. For Puris:
1 cup semolina (sooji)
1 tablespoon all-purpose flour (maida)
A pinch of baking soda
Water (as needed)
Oil (for deep frying)
2. For Filling:
1 cup boiled chickpeas
1 cup boiled potatoes (mashed)
1 small onion (finely chopped)
2-3 green chilies (finely chopped)
2 tablespoons chopped coriander leaves
Salt (to taste)
Chaat masala (to taste)
Black salt (to taste)
Lemon juice (to taste)
3. For Tamarind Water:
1/2 cup tamarind pulp
4 cups water
1 teaspoon roasted cumin powder
1 teaspoon black salt
1 teaspoon chaat masala
2-3 tablespoons sugar (adjust to taste)
Salt (to taste)
Instructions:
1. Making Puris:
In a mixing bowl, combine semolina, all-purpose flour, and a pinch of baking soda.
Gradually add water and knead into a stiff dough.
Cover the dough with a damp cloth and let it rest for about 20-30 minutes.
After resting, knead the dough again and divide it into small, equal-sized balls.
Roll out each ball into thin circles (around 2-inch diameter).
Heat oil in a deep frying pan. Once the oil is hot, fry the puris until they puff up and turn golden brown.
Remove the puris and place them on paper towels to drain excess oil.
2. Preparing the Filling:
In a bowl, mix boiled chickpeas, mashed potatoes, chopped onion, green chilies, and coriander leaves.
Add salt, chaat masala, black salt, and lemon juice. Mix well.
3. Making Tamarind Water:
In a large bowl, combine tamarind pulp with 4 cups of water.
Add roasted cumin powder, black salt, chaat masala, sugar, and regular salt.
Stir well until everything is dissolved and well mixed.
4. Assembling Pani Puri:
Take a puri and gently make a hole in the center.
Stuff the puri with a spoonful of the chickpea-potato filling.
Dip the stuffed puri into the tamarind water and serve immediately.
