Ingredients:
For the Roti: 4 Roti or paratha (flatbread), chopped into small pieces
For the Kottu: 2 tablespoons oil
1 large onion, finely chopped
2 cloves minced garlic,
1-inch piece of ginger, minced
2 green chilies, sliced (optional, for
extra chilli)
1 carrot, Julien cut
1 bell pepper, Julien cut
1 cup thinly sliced cabbage,
2 eggs
1 cup cooked chicken, shredded
(optional)
2 tablespoons soy sauce
1 tablespoon curry powder
Salt and pepper to taste
2 green onions, chopped (for garnish)
Instructions:
Prepare the Roti:
Chop the Roti: Use a knife or kitchen scissors to chop the roti into small, bite-sized pieces.
Cook the Kottu:
Heat the Oil: In a large pan or wok, heat the oil over medium heat.
Sauté Aromatics: Add the chopped onion, garlic, ginger, and green chilies. Sauté until the onion is soft and translucent.
Add Vegetables: Add the carrot, bell pepper, and cabbage. Stir-fry for 5-7 minutes until the vegetables are tender.
Scramble the Eggs: Push the vegetables to one side of the pan. Crack the eggs into the empty side and scramble them until cooked through. Mix the eggs with the vegetables.
Add Chicken: If using chicken, add the shredded chicken to the pan and mix well.
Season: Add the soy sauce, curry powder, salt, and pepper. Stir to combine.
Add Roti: Finally, add the chopped roti pieces to the pan. Mix everything together and stir-fry for another 5 minutes until the roti is well coated and heated through.
Garnish and Serve Kottu Roti
