2 teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
1 teaspoon instant coffee powder (optional, enhances chocolate flavor)
1 cup milk
½ cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup boiling water
Frosting for Chocolate Cake:
1 cup unsalted butter, softened
1½ cups unsweetened cocoa powder
5 cups powdered sugar
½ cup milk
2 teaspoons vanilla extract
A pinch of salt
Instructions
Making the Cake:
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and dust with flour two 9-inch round cake pans.
- Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, salt, and instant coffee powder (if using).
- Add Wet Ingredients: Add the milk, vegetable oil,
eggs, and vanilla extract to the dry ingredients. Beat on medium speed until they combined well. - Add Boiling Water: Carefully add the boiling water to the batter. The batter will be thin, but this makes the cake moist.
- Bake the cake: Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or check with a toothpick inserted into the center comes out clean.
- Cool: Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.
Making the Frosting:
- Cream Butter and Cocoa: In a large bowl, beat the softened butter until creamy. Gradually add the cocoa powder and beat until well mixed.
- Add Sugar and Milk: Add the powdered sugar and milk alternately, beating to spread consistency. Add more milk if needed.
- Add Vanilla and Salt: Stir in the vanilla extract and a pinch of salt. Beat until the frosting is smooth and fluffy.
Gathering all layers of cake:
- Level the Cakes: If needed, use a serrated knife to level the tops of the cakes.
- Frost the Cake: Place one cake layer on a serving plate. Spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake.
- Decorate: Decorate the cake with any additional toppings you like, such as chocolate shavings, sprinkles, or a drizzle of chocolate ganache.
Enjoy the bite: Slice and enjoy a piece of this rich, chocolatey delight!
