“Spicy Vada Pav: Mumbai’s Bold Flavors Street Food”

Spicy Vada Pav Recipe

Popular Indian street food that is loved by many is “spicy vada pav.” Often stated as the Indian burger, Vada Pav is a delicious and satisfying snack.

Ingredients:

For the Vada (Potato Fritter):

3 large boiled and mashed potatoes

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 tablespoon ginger-garlic paste

2 green, finely chopped chili

1/2 teaspoon turmeric powder

A pinch of asafoetida (hing)

Salt (to taste)

Fresh coriander, finely chopped leaves

Oil (for frying)

For  Batter:

1 cup chickpea flour (besan)

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder

A pinch of baking soda

Salt (to taste)

   Water (as needed)

For Assembly:

  • 8 pav buns (or
    any soft dinner rolls)
  • Green chutney
    (coriander-mint chutney)
  • Tamarind chutney
  • Garlic chutney
    (optional)
  • Fried green
    chilies (optional)

Instructions:

Vada Pav

1. Prepare the Vada:

Heat a tablespoon of oil in a pan and  add mustard seeds and cumin seeds. Let make them aromatic.

Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.

Add turmeric powder, asafoetida, and salt. Mix all the ingredients well.

Add the mashed potatoes and chopped coriander leaves. Mix thoroughly and cook for a couple of minutes. Let the mixture cool. Once cool, shape the potato mixture into small, round balls.

2. Prepare the battery:

In a bowl, mix chickpea flour, turmeric powder, red chili powder, baking soda, and salt. Gradually add water to make a thick, smooth batter.

3. Fry the Vadas:

Heat oil in a deep pan for frying.

Dip each potato ball into the batter, making sure it is coated evenly.

Gently drop the coated potato balls into the hot oil and fry until golden brown. Remove and drain on paper towels. 

4. Assemble the Vada Pav:Vada Pav

Slice the pav buns in half. Toast them lightly with a bit of butter on a pan, if desired.

Spread green chutney on one side of the bun and tamarind chutney on the other side.

Place a vada in between the bun halves.

Add a sprinkle of garlic chutney for extra spice, if using.

Serve with fried green chilies on the side for an authentic touch.

Tips:

You can add a few slices of onion or cucumber for extra crunch inside the Vada Pav.

Serve immediately while the vadas are hot and crispy.
