This mutton stew recipe is easy to prepare and uses fewer spices, allowing the natural flavors of the meat to shine through. The dish is flavorful and perfect for an enthusiastic meal.

1 kg mutton (bone-in pieces)

2 large onions, finely sliced

3 medium tomatoes, chopped

2 green chilies, slit lengthwise

1 cup plain yogurt

1/4 cup vegetable oil or ghee

1/2 cup fresh coriander leaves, chopped

Instructions:
1. Prepare the Mutton: Wash the Mutton pieces thoroughly and drain them well.
2. Marinate the Mutton: In a big bowl, mix the yogurt, turmeric powder, black pepper, ground cumin, ground coriander, and salt. Add the mutton pieces to the bowl and coat them well with the marinade. Cover and let it marinate for at least 1 hour, or preferably overnight in the refrigerator.
3. Cook the onions: In a large pot or pressure cooker, heat the vegetable oil or ghee over medium heat. Add the sliced onions and cook until they are golden brown, stirring occasionally. This should take about 10–15 minutes.
4. Add the aromatics: Add the minced garlic, ginger, and slit green chilies to the pot. Sauté for 2-3 minutes until fragrant.
5. Cook the tomatoes: Add the chopped tomatoes to the pot and cook until they soften and start to break down, about 5-7 minutes.
6. Combine with Mutton: Add the marinated mutton pieces to the pot, stirring to combine them with the onion-tomato mixture. Cook on medium-high heat for about 10 minutes, allowing the meat to brown slightly.
7. Add Water: Add enough water to the pot to cover the mutton. Bring the mixture to a boil.
8. Simmer the Mutton: If using a regular pot, cover and reduce the heat to low. Let it simmer for 1.5 to 2 hours, or until the mutton is tender and cooked through. Stir occasionally and add more water if needed to keep the meat from drying out.
If using a pressure cooker, cover and cook on medium heat for about 20–25 minutes (depending on your pressure cooker’s instructions) after the first whistle. Release the pressure naturally before opening the lid.
